Yes, it literally translates to “dirty sheet.” And honestly? We love that for her.

In Emilia Romagna, nonnas would roll out long sheets of pasta, spread the filling generously, then fold it over — leaving little streaks of richness behind. Nothing wasted. A little messy. Very delicious.

It wasn’t about perfection. It was about flavour. About using every last bit. About getting your hands a little “dirty” in the process.
