Join us on Thursday 18 June for a six-course Italian wine dinner showcasing the craftsmanship of Del Bocia Butter and the wines of Viberti from Piedmont, Italy.

Led by Head Chef John Mu (formerly of Vue de monde), each course explores a different expression of butter, from whipped cultured butters and native herb butter to brown butter desserts, all paired with carefully selected Italian wines.

Featuring dishes including Moreton Bay Bug Risotto, Humpty Doo Barramundi, Sher Wagyu MS9+ Rump Cap and Brown Butter & Poached Quince.

Join us for a one night only Sake & Sensory experience. Five courses, five premium sake pairings, moving from light and expressive through to deeper, more layered flavours, finishing clean and refreshing.

From delicate sparkling alongside Sydney rock oysters to cut through brightness, through to structured Junmai Ginjo paired with Wagyu MS9 to balance richness with clarity and length, before finishing on a bright, textural dessert with a surprise sake pour.

Led by Head Chef John Mu and SSA-certified Sake Sommelier William Yang, each pairing is designed with intent to complement, contrast and carry the experience forward.
