• Gin or vodka: botanical character or a cleaner, more subtle base.
• Dry or wet: less vermouth or more vermouth.
• Dirty: olive brine for a salty, savoury edge.
• The garnish: fragrant citrus oils from a twist, or a savoury olive to enjoy alongside your drink.

Before we had a bar, we had two Todd White paintings—and a pretty clear idea of the nights we wanted to create.

We discovered his work in a New Orleans gallery while the original Eau-de-Vie Sydney was still just an idea. No lease. No venue. But those characters, gathered over drinks, captured exactly the atmosphere we imagined.

We brought two paintings home anyway.

When Eau-de-Vie Melbourne opened in 2011, Todd’s work became part of its character too.

Look closely and you’ll see why we love it: expressive faces, sideways glances, hands wrapped around glasses. Every group seems to have a story, and you can almost hear the conversation.

Great drinks, good company and a little mischief. That felt like Eau-de-Vie then. It still does.
