Sending Mum Back to Her Motherland 🇻🇳❤️

This trip is extra special.

We’re sending Mum back to Ho Chi Minh City, the place she calls home and where her incredible journey began.

We work hard so we can give back to the woman who sacrificed so much for our family. Every opportunity we’ve had is because of her courage, resilience, and determination. This trip is our way of saying thank you.

Mum is the OG in every sense of the word. Back in 1978, she created her original Crunchy Garlic Chilli Oil recipe — long before chilli oils became a trend. It was made with love, tradition, and the bold flavours of Vietnam, and it’s the foundation of what we proudly share today.

Seeing her back in her element, bargaining with the locals, navigating the bustling markets, and reconnecting with her roots is something truly special. She hasn’t missed a beat. 😊

Everything we do is built on the sacrifices she made and the traditions she passed down. None of this would be possible without her.

Can’t find good baked eggs? Make them yourself. Chorizo + Crunchy Garlic Chilli Oil = long weekend sorted. 🌶️🥚

RECIPE

Finished with Proud Phoenix & Co Crunchy Garlic Chilli Oil and served with warm Manas Sourdough Bakery sourdough.

Serves

4

Ingredients

* 200g chorizo, sliced
* 1 large brown onion, thinly sliced
* 1 tbsp olive oil
* 1 x 400g can diced tomatoes
* 1 jar (300–350g) tomato salsa
* 100g baby spinach
* ½ cup Kalamata olives, pitted
* 6 eggs
* 100g feta, crumbled
* 1 tsp dried oregano
* 1 tsp smoked paprika
* Salt and freshly cracked black pepper, to taste
* 2–3 tbsp Proud Phoenix & Co Crunchy Garlic Chilli Oil
* Warm crusty sourdough bread from Manas Sourdough Bakery, to serve

Method

1. Preheat the oven to 190°C (fan-forced 170°C).
2. Cook the chorizo in a large ovenproof skillet or cast-iron pan over medium heat until lightly golden and fragrant.
3. Add the sliced onion and cook until softened and lightly caramelised, about 5 minutes.
4. Stir in the canned tomatoes, tomato salsa and Kalamata olives. Simmer for 8–10 minutes until the sauce thickens slightly.
5. Add the spinach and stir until wilted.
6. Season with oregano, smoked paprika, salt and cracked black pepper.
7. Make six wells in the sauce and crack an egg into each one.
8. Scatter over the feta and transfer to the oven.
9. Bake for 8–12 minutes, or until the egg whites are set and the yolks are cooked to your liking.
10. Finish with a generous drizzle of Proud Phoenix & Co Crunchy Garlic Chilli Oil, allowing the crispy garlic and aromatic chilli oil to coat the eggs and sauce.

To Serve

Serve straight from the skillet with warm, crusty sourdough from Manas Sourdough Bakery, perfect for mopping up the rich tomato sauce, creamy feta and spicy crunchy chilli oil.
