Le Menú de “CONTENTIOUS BUFFET” with .design every course is designed around the used of crickets. Techniques involving roasted, deep fried, powder, smoked & brewed. Those were the starting point what we did with crickets but definitely thousand more ways to work with crickets.

LAPSANG SOUCRICKET. We made our own blend inspired by “正山小種”(zhenshang xiaozhong) aka Lapsang Souchong using broken surplus pu’er tea & crickets. We cold smoked them for 2 days with random wood chip we found.

Notes: Toasted oatmeal, smoky, savoury.

The tea was part of a welcoming gesture for the guests at last week’s event with .design

Join us this Thursday/TOMORROW for an event with and exploring the life-cycle of oysters through food and ceramics.

Claudia has been working out of the Collective Territories space on a special commission for Parcs that utilises waste shells and wood ash from the restaurant in the glaze mix. The event will include an exhibition of the process, from shell to glaze and the opportunity to have a conversation with Claudia about the work.

We will be there to feed you oysters 👀.

CONTENTIOUS BUFFET: August 13 & 14 in Apollo Bay 🦗

Fusing ’ future-focused politics with ’s divergent food thinking, the result is an unpredictable and invigorating afternoon of performance, participation and surprising bug-snacks.

Bugs Bunny. Jiminy Cricket. The Beatles. Y2k. Part-performance lecture, part-intervention, part-lunch – Contentious Buffet is an experimental community hall buffet investigating food neophobia, bugs in popular culture and low carbon alternatives to food consumption.

Bringing together local Otways producers alongside some of Melbourne’s most experimental artists, food designers and thinkers, this event will get you thinking about how it was that Apollo Bay’s famous rock lobster shifted from being a ‘sea cockroach’ into one of the world’s most expensive and sought after delicacies.

So lucky to be working with Le famous artist of .editions in the making of some plates for our oyster dish at .melbourne. Done by utilising the oyster shells as glaze and the recycled clay from mix failed projects.
