What’s up !

Today I’m mixing up a classic Sea Breeze with which was kindly sent to me from
It’s an ultra-premium vodka inspired by the legendary Waterwitch shipwreck off King Island back in 1854.

It’s clean, crisp, dangerously easy to drink and hands down one of the best vodkas I’ve ever tried! No joke!

Winter might be here, but this one is bringing back those summer vibes all season long!

Side note: Traditionally this drink has 90ml of cranberry juice, however I pulled back slightly (60ml) for more balance to highlight this incredible vodka and make it POP!

If you’re in Australia, grab a bottle and create your own cocktail magic! And tag me in your Waterwitch Vodka creations with the product.

Use code “PAUL10” for 10% off your order at King Island Distillery Bass Strait.

90ml / 3oz Cranberry Juice

Please remember to drink responsibly.

THE DRINK:Fresh lemon lifts the cocktail with a vibrant citrus snap, while pink dragonfruit syrup brings subtle tropical sweetness and that gorgeous bright colour. Elderflower adds delicate floral depth and the silky foam ties everything together into a smooth, velvety finish.

Recipe:🌸 60ml / 2oz Pink Gin🌸 22.5ml / .75oz Fresh Lemon Juice🌸 15ml / .5oz Pink Dragonfruit Syrup🌸 10ml / .3oz Elderflower Liqueur🌸 22.5ml / .75oz Egg White

What’s up ! Happy !

If you know someone who HATES Campari and want to change that… SAVE this post and send it to them! This is the drink that will change their mind!

I’ll be completely honest, I was nervous about the Campari (we’re not exactly best mates lol) But at 7.5ml it plays really nice. It adds complexity and depth without taking over the drink!
You get bright juicy grapefruit up front followed by warm agave. Subtle floral notes from the elderflower with that gentle Campari edge on the finish. And of course the saline quietly makes everything pop.
It’s well balanced and you can taste every element doing its job in this drink!

60ml / 2oz Reposado Tequila
7.5ml / .25oz Campari
7.5ml / .25oz St-Germain
30ml 1oz Fresh Ruby Grapefruit Juice
5ml / Bsp Agave Syrup
3 drops saline

METHOD:
Add all ingredients to a cocktail shaker with ice. Shake hard for 10-12 seconds. Fine strain over crushed ice into a chilled old fashioned glass. Garnish with dehydrated orange and dried edible flowers on the side (I used a basting brush with agave)

If I could make just one change to this, I’d probably add about 7.5ml fresh lime juice to lift it and add a little extra zing. But as it stands, it’s a very solid creation!
Did I hate it? Absolutely not! I’m actually shocked at how much I loved this drink!

Shoutout to for the beautiful dehydrated garnishes! Make sure you follow and check them out if you’re in Australia!

So tell me…
Would you add the lime? Leave it as is? Or tweak something else? Let me know in the comments 👇🏼

Cheers,
Paul

What’s Uuuup !! Happy !

It’s been a bit of a crazy start to the year let me tell you! I’ve missed you guys!!

Between shoots, private projects and just life in general… Things got hectic for a minute! But I’m back baby! 😍

Kicking things off with a proper classic! The Mint Julep. With all the craziness, I felt this was appropriate 😜

This spirit forward drink dates back to the 1700s in the American South, but most people know it thanks to the Kentucky Derby, where it’s been the official drink since 1938! Bourbon, fresh mint, sugar, crushed ice. That’s it! It’s kinda like the Old Fashioned’s crazy cousin in a way 🤪
It’s simple, cold, and seriously refreshing!

60ml / 2oz Quality Bourbon
10ml / .3oz Simple Syrup
12 Mint Leaves
Crushed Ice

- -

METHOD:
Add mint leaves and simple syrup and lightly muddle (press to release oils). Add bourbon and fill a julep cup 2/3 with crushed ice. Churn and pull through the mint with a barspoon till the cup is frosted. Top with more crushed ice and garnish with a bouquet of fresh mint and drink with your favourite short straw.

Are you team Julep? Or is there another classic you’d pick on a hot day? Let me know bellow!

Cheers,
Paul

ℝ𝕦𝕞 𝕊𝕠𝕦𝕣

What’s up !

If you’re a sucker for a classic sour, keep reading coz you’re going to love this!
Funky aged 5yr rum, fresh lemon juice, a touch of vanilla syrup, and the most gorgeous silky foam on top you’ve EVER seen!

I used (gifted) and I’m honestly blown away by the results! It’s a plant-based foamer made right here in Australia, and get this… It shelf-stable for a massive 12 months after opening (yep, an ENTIRE YEAR!) Keep it in a cool, dry place and you’re all set! The team also advised it would last even longer if kept in the fridge! I spent 15 minutes shooting this drink and it didn’t budge! Seriously wow!!

This is hands down the BEST “egg white” alternative I’ve ever used in my life! No more wasting eggs ever again!! Thank you so much team… You truly have a superior product!!

==

60ml / 2oz Aged Rum
30ml / 1oz Fresh Lemon Juice
22.5ml / .75oz Vanilla Syrup
30ml / 1oz Cocktail Foamer
2 Drops Saline

==

METHOD
Add all ingredients to a cocktail shaker. Dry shake. Add ice and wet shake for 10-12 seconds. Double strain into a chilled coupe and admire that silky, cloud-like top! Garnish with dehydrated lemon.

PRO TIP: For best foam results, when wet shaking, add one large ice cube and 3 small agitator cubes. Shaking hard and away from your chest with the shaker pointing away from you will create amazing aeration creating thick velvety foam!

Drop a comment if you’re team rum… Or should the next one be gin?

What’s Uuup !

Happy ! And Happy to all my American friends! The votes are in and YOU have spoken! And wow! What a masterpiece this is!

This drink is decadent, smooth, and enough funk to keep you going! Think deep, tropical silky chocolate vibes, and a bold roasted coffee that hits like a wink across the bar. Subtle cinnamon spice sneaks in on the back of the palate, rounding out in a luscious, creamy finish that’s perfectly balanced with a few drops of saline. It’s rich, aromatic, and dangerously easy to fall for… Consider yourself warned.

60ml / 2oz Aged Jamaican Rum
22.5ml / .75oz Coffee Liqueur
22.5ml / .75oz White Crème de Cacao
90ml / 3oz Heavy Cream
3 Dashes Cinnamon Tincture
3 Drops Saline

METHOD
Add all ingredients with ice to a cocktail shaker. Shake what ya mumma gave ya for 10-12 seconds. Fine strain over ice in a tall glass. Garnish with grated cinnamon and 3 coffee beans.

This drink was super close to being served up in a coupe! This would still be absolutely incredible! But the reason I do these cocktail creations is to step outside the norm and dare to be different!

How would you drink this delicious creation?
Let me know in the comments!

to the weekend!

Happy FriYay !!

First cocktail creation back and honestly, you legends nailed it! Who would’ve thought bourbon and green chartreuse were a match made in heaven 🤯

Shoutout to for sending me his bitters! If you haven’t tried them, check out his website and get into them! You’ll thank me for it later!

Use my code 𝐓𝐀𝐁𝟏𝟎 for 10% off all his bitters 😊

In this drink I’m using his chocolate bitters! With a blend of spicy ginger, earthy chicory, aromatic cassia and cardamom gives it a uniquely balanced complexity, creating a symphony of flavours!

THE DRINK:
Think warm vanilla and oak meeting a juicy apple bite, with citrus cutting through and a herbal-chocolate finish that hangs around like it’s got nowhere better to be but in your hand!

So tell me… are you shaking this one up tonight or saving it for someone special?

- -

60ml / 2oz Bourbon
22.5ml / .75oz Green Chartreuse
22.5ml / .75oz Fresh Lemon Juice
15ml / .5oz Apple Juice
10ml / .3oz Vanilla Syrup
2 Dashes Choc Bitters
2 Drops Saline (20%)

METHOD:
Add all ingredients to a cocktail shaker with ice. Shake for 10-12 seconds. Fine strain over cracked clear ice. Garnish with an apple fan.

If you make this, make sure you take a bite of an apple fan piece and sip this drink! The apple makes everything POP!

𝑪𝒍𝒂𝒔𝒔𝒊𝒄 𝑫𝒓𝒚 𝑴𝒂𝒓𝒕𝒊𝒏𝒊

The iconic dry martini has been turning heads since the early 1900s, when gin and vermouth decided to get together and create liquid perfection.

It’s been called the “king of cocktails,” the drink of choice for spies, starlets, and anyone who knows how to order with confidence. HOWEVER… Shaken or stirred? That’s a debate that’s been going on for over 100 years! One thing’s for sure though, nothing says sophistication with a side of sass quite like a martini!

Today I’m featuring my new favourite orange bitters from and Bonbeach Dry gin from my absolute “go to” Melbourne distilleries .

Thank you so much to both of these legends for your ongoing support!!

==

75ml / 2.5oz London Style Gin
15ml / .5oz Dry Vermouth
1 Dash Orange Bitters
Quality Ice!

==

METHOD:

Add all ingredients to a mixing glass and stir with love for 30 seconds. Strain into a chilled martini glass and garnish with 2 skewered green olives.

NOW…. If you prefer to shake your martini’s and double strain just so you can feel like James Bond for 5 minutes (even though he uses vodka) then do that lol

Just enjoy it how you like it ok lol 😜

Cheers to the weekend peeps!

Paul 🍸

𝚂𝚒𝚍𝚎𝚌𝚊𝚛 (classic)

So I was reading through Cocktail Codex from the other day and thought it’s been a minute since I’ve made this classic!

This zesty little number dates back to the roaring 1920s, with roots in either Paris or London (depending on who’s telling the story). Legend has it, it was named after the motorcycle sidecar (a stylish way to arrive) just like this cocktail!

If you’ve never had one, check it off your list and try it! It’s a classic for a reason! Full disclosure, this is normally garnished with an expressed orange twist but I had no oranges (it has been known to be served without too)

45ml / 1.5oz Cognac
30ml / 1oz Cointreau
22.5ml / .75oz Fresh Lemon Juice
I added 2 drops of saline but not in the classic recipe

==

METHOD:
Add all ingredients to a cocktail shaker with ice and fine strain into a chilled coupe. Garnish with an expressed orange twist in the glass.

Let me know if you’ve tried this classic in the comments and what you think of it.
