From 5pm each day, Patsy’s apero hour offers a selection of drinks and snacks at gentler prices — the same thoughtful wines, careful cocktails and kitchen detail, simply poured a little earlier.

Looking through some pictures to post today. Here is a little photo dump for our instagram friends.
1st image - this is a stem of celtuce - it’s a type of lettuce grown for the stem - we have some more in the ground at the farm and are looking forward to using it again.

2nd image - it feels like the end of the long summer of tomatoes as yesterday we pickled a huge amount of green ones that never got the chance to ripen, however here they are in all their red summer glory.

3rd image - some fabulous mushroom pate - almost impossible to see in this photograph but there is a scattering of pickled green walnuts on the top… we always pick the walnuts before they are ripe as our tree is so huge we cannot net it and that way you our guest can enjoy them rather than the birds.

4th picture is of the violetta eggplants the last of which we are serving in a savoury clafoutis this weekend.

5th image is our girella pasta…. This is coming off the menu in the next day or two as well as we move into full winter deliciousness, so for those fans out there come in tonight or tomorrow - last chance for a while.

6th image just a cosy table for two to make choosing to make a booking that much more attractive this weekend.

And the final image is Matt up the huge walnut tree gathering the green nuts for pickling..

The world of wine is full of delicious drinks.

Our team spend hours each week - tasting and sharing the fruits of the labour from winemakers both here in Australia and all over the Mediterranean.

Our wine list has been compiled with the intention of showing the connection between the wines of this region and the culture of vegetation dishes that have emerged alongside those vines.

Don’t be afraid to try something new - we love serving this wines and of course really love chatting about them.

Our garden is full of interesting things to eat. We even have a huge old walnut tree, it’s way too big to net from the birds….
so we pick the nuts when they are young, they almost look like big olives, we brine the green walnuts to help reduce their bitterness, then they go into a sweet pickle for a few weeks. The pickled green walnuts are perfection as an accompaniment to mushroom pate.
Oftentimes it’s trying to deal with the issues that come from nature that give us some of our best little taste sensations at Patsy’s.

Cucuzza - or Sicily’s serpent zucchini is grown for a few really different dishes.
You can eat the tender shoots called “tenerumi” is a light summer soup which is the reason we first started growing them last summer.

We discovered that the long thin pale green gourd was really tasty and subtle. The texture was intriguing and the flavour unique - so this year we are serving them roasted and dressed in barberry & pistachio dressing.

Holly is in the kitchen today making a huge pot of cucuzzata siciliana (a sweet jam) which is going in a white chocolate tart later this week…

so exciting to be able to grow and use such interesting vegetables for our guests.

During summer - First thing every morning and late in the afternoon in Rocklyn someone picks the Long Florence zucchini flowers.

Some days there are almost one hundred ready for harvest. It’s very lucky that we have so many as almost every table at Patsy’s orders them. - we also share them with our other sister restaurants

They are on the menu until the first frost of the season at which point they suddenly disappear until next year…. If you haven’t been in this summer time is running out - the nights in the central highlands where our garden is located are already cooling down….

Culurgiones are a traditional pasta dumpling from the Ogliastra region of Sardinia- they are a little complicated to make into their distinctive braided wheat-spike shape. really really delicious and well worth the time it takes to learn how to fold and pinch the dough so that they look plump and beautiful…

At the start of summer we gathered huge amounts of elderflowers with a bumper crop we thought we might try freeze drying some… this is them! Outrageously beautiful and still aromatic and delicious. Going on the menu tomorrow with some strawberries preserved in vermouth. Yes please thanks for helping us with the freeze drying. Yummo

You must have experience and a love of wine, would be great if that was also a love of vegetables as well but it’s more about the wine - the role would suit someone studying or with another commitment as it is about 24 hours a week… probably more hours in the next few weeks if you would want but ongoing around 24 hours a week.
