Meet Our New Head Chef: Daniel Johnston
We're excited to welcome Daniel Johnston to the Settlers Tavern kitchen.
Originally from the UK, Daniel brings with him nearly two decades of international culinary experience, leading kitchens across luxury resorts, award-winning restaurants, and major hospitality projects throughout Australia and South-East Asia.
From beachfront resorts in Thailand and the Philippines to wine regions closer to home, Daniel has built a reputation for creating produce-driven menus that celebrate seasonality, quality ingredients, and great hospitality.
His cooking style is inspired by Modern Mediterranean and South-East Asian flavours, with a passion for coastal cuisine, woodfire cooking, and letting great produce speak for itself.
Most importantly, Daniel shares the same philosophy we've always believed in at Settlers; sourcing the best ingredients we can, supporting great producers, and creating memorable dining experiences that bring people together.
You'll be seeing a few new ideas emerge from the kitchen over the coming months (whilst the favourites and classics will always remain) and we can't wait to share them with you.
