Our coffee never sleeps.

Whether it’s the after-school run, a post-lunch catch-up with friends, or a moment of quiet solitude, the afternoon coffee break deserves its own ritual.

Long after many of Launceston’s cafés have closed their doors for the day, our coffee machine is in it for the long haul.

Join us any time (yes, even the 3pm slump) Monday-Saturday for an expertly made coffee and a seasonal treat from the counter.

Ever wondered what Stillwater was before it became Stillwater? A lot of guests ask what the building used to be.

Those beautiful old timber beams, thick stone walls, original silos & river views are all part of a bigger story.

Long before it was one of Tasmania’s most celebrated restaurants, it was Ritchies Mill: a water powered flour mill built in the 1840s. Even older is the original granary dating back to 1832 which now houses our w**e cellar.

By the 1970s, the old mill had become an arts centre.

Then, in 2000, Stillwater opened its doors.

And in 2019, Stillwater Seven accommodation Stillwater Seven was added, with guests now able to stay amongst the original fabric of the building, including the old Miller’s Cottage.

So yes…you can now sleep & dine in the same building that once supplied the city with water & flour & we think that’s pretty special - not a bad second act for a flour mill!

Snack: Fried tiger prawn + nori ‘stick’, gochujang mayo + spring onion relish

Entree: Sashimi, smoked cultured cream, white soy + yuzu kosho, pickled grapes + nori furikake

Main: Local market fish, parsley velouté, lemon potato rösti, lobster emulsion + zucchini

Dessert: Burnt honey parfait, brown sugar tuile, tonka bean cream, poached rhubarb + toasted almond crumb
