Dry aged coral trout crudo, burnt butter, kalamansi, black pepper, finger line, cherry tomatoes and hot mint.

Freshly caught coral trout is dry aged for 3 days, then pressed in a tortilla press and carefully cut. Served with a burnt butter sauce, spiked with fish sauce and kalamansi, home grown hot mint (Vietnamese mint), a good sprinkle of black pepper and cherry tomatoes & finger lime for a pop of freshness. Very limited, on the specials now.
