Four Pillars was created by three mates and one extraordinary still (Cam, Matt, Stu and Wilma). Our first release was a Rare Dry Gin which has gone on to win medals around the world. In terms of our ambition for our first gin, we didn't want a London Dry Gin but we couldn't ignore juniper. The way we have approached it is that the juniper is the canvas and the other botanicals paint the picture. T
he tassie pepper is brilliant on the palate, giving us warmth rather than heat. Lemon myrtle is a beautiful, complex and unique alternative to lemon peel. It’s unusual to use fresh produce in gin but Australian citrus is highly aromatic and supports the spicier botanicals like coriander, cardamom and star anise. Ultimately, it’s about trying to deliver the best of both worlds… a perfect, classic gin and something that would fascinate and delight even the most hardened gin fanatic… spicy but with great citrus, a truly modern Australian gin. We have since expanded both our distillery and production with five magnificent gins in our core range. Jude, Beth, Eileen and Coral now accompany Wilma in producing spectacular gin, and we have a Four Pillars Laboratory based in Surry Hills, Sydney. We won International Gin Producer of the Year at both the 2019 and 2020 IWSC awards in London.
