The Everleigh is a sister bar to world-renowned Milk & Honey, NYC (now closed), founded by the late Sasha Petraske. Milk & Honey was responsible for the cocktail renaissance of recent years and paved the way for bars internationally. he Everleigh, we place a huge amount of importance on the customer experience and everything it consists of. What sets us apart is the fact that we want to get to know you. We spend time with each guest to ensure that his or her experience is entirely interactive and engaging. We suggest everyone looking for a cocktail tells us what they do and don’t like and leave it to us to deliver exactly what they’re after - this method is known as ‘Bartender’s Choice’. The Everleigh team is a very close family, all dedicated to the same goal.

For the first time since closing its Gertrude St doors, The Everleigh will make an appearance at the Makers & Shakers Market on Saturday 6th and Sunday 7th September.

In celebration of the release of their much anticipated book The Madrusan Cocktail Companion, Michael & Zara Madrusan will bring their signature golden age charm and timeless classic cocktails the Royal Exhibition Building across Father’s Day weekend.

The Makers & Shakers Melbourne features a curated lineup of handmade stalls of Australian made homewares, slow fashion, food and drink. Michael and Zara will shake things up from served 10am–4pm each day, as well as hosting an exclusive Cocktail Masterclass from 3-4pm daily, showcasing recipes and techniques from the new book for an intimate group.

After fourteen years, that little glimmer of light on Gertrude St has gone out for the last time. The Everleigh has meant so much to so many, hosted so many memorable moments, and we will be forever proud of what this beautiful bar has delivered and accomplished as one of the world's best cocktail bars. The legacy speaks for itself.

As the only official outpost of Milk & Honey, New York, in Australia, we have been proud to hold the baton for the man who started it all, my mentor, the chief, Sasha Petraske.

Whilst our Gertrude St home is no more, the spirit of The Everleigh will live on in every perfectly balanced, three-ingredient cocktail served on crystal clear block ice, delivered without ego, hereafter. The Everleigh family also extends far beyond these four walls, to our devoted regulars and team past and present doing remarkable things around the globe.

To all who have loyally loved and embraced The Everleigh, we thank you sincerely. Without your support we would never have made it this far. It has truly been our honour to serve you.

History lives on at The Everleigh.

Behind the bar is the original till from Milk & Honey.

Milk & Honey opened in 1999, New York where The Everleigh Founder, Michael Madrusan, learnt everything to know about fine drinking. This till was a parting gift from its founder, Sasha Petraske. A mentor, business partner and dear friend.

Once the till had landed in The Everleigh, it was in operation from 2011-2016 with drinks being recorded by hand.

Victoria's Pride St party returns to Gertrude St on Sunday 9th February!

Join us at our corner bar for a cocktail and see the street transformed for a block party jam packed with live entertainment in celebration of Victoria's diverse LGBTIQ+ communities. Our street side bar will be back in action from 12pm, service up a menu of summery Spritzes.

Street side cocktails from 12-5pm. The Everleigh will open as usual from 5pm, with live jazz from 8.30pm.
