Good things are happening at the Daylesford Hotel, and we've got two positions to fill - both starting as soon as we find the right people.

Front of House - Casual - You've done this before. You have an RSA. You know the floor, you know how to read a room, and you enjoy looking after people. Experience in front of house is required. In return, you'll be part of a venue that takes hospitality seriously and has a lot of fun doing it.

Junior Front of House - Casual - Just starting out? Perfect. This one's built for someone keen to learn the ropes in a real, busy pub environment. Weekends, after school work, and school holiday coverage - great hours for students or anyone easing into hospitality.

Steak Night at the DH | Every Wednesday from 6pm

A rotating cut of quality beef served with mixed leaf, chippies, your choice of sauce, house mustards, and a glass of house wine. $35

This week's steak: Greenhills Farm | Grass-fed Porterhouse 300g

The porterhouse is back and so are the Layfields. Matt and Ron run Greenhills across two properties in Malmsbury and the Macedon Ranges | rich volcanic country about 20 minutes from Daylesford, where the pasture grows thick and the cattle are left to get on with it.

Limousin Angus cross, 400 acres, no feedlots, no hormones, no antibiotics. The herd is handled with care from paddock to processor, and all beef is dry aged before it's butchered. You can taste the difference.

Hosted by the Central Highlands' own Matthew Colin of Castlemainaoke, three hours of pure karaoke chaos kicks off from 7pm. Country and western, pop princess, power ballad devotee… Matthew's songbook has got you covered.

Doors open 6pm. Songs from 7pm until 10pm. Free entry.

The Community Raffle kicks off at 5.30pm, drawn at 7. This month we're raising for Daylesford Football Netball Club, and 100% of ticket sales goes straight to them. Grab a ticket at the bar and get behind a good one.

Tonight in Bar Bamford, Valiant Von Thule on the piano from 7pm until 10pm. Free entry, warm room, good drinks.

Back to the porterhouse this week, and back to the farm we know well. Greenhills is owned by the Layfield family | the same family behind the Daylesford Meat Co. | with their farm sitting across two properties in Malmsbury and the Macedon Ranges, about 20 minutes down the road.

400 acres of rich volcanic soil, thick pasture, and old pine trees. Limousin Angus cross cattle raised entirely on grass, with no feedlots, no hormones, no antibiotics. Matt spends time with the herd, which keeps them calm. Calm cattle, better meat. All beef is dry aged before butchering.

As local as it gets.
