A dish that moves between smoke, heat and brightness, with the sweetness of the octopus balanced against sharp fruit, chilli and fragrant Vietnamese spice.

Roasted chicken supreme, roasted until the skin turns crisp and golden.

Marinated with lemongrass, chervil, sorrel, garlic, chilli and shallot, with a light curry glaze over the top. The meat stays tender, with taro chips on the side for a little crunch.
