Meet the New York Sour.

Built on Lapsang rye, so the smoke’s doing real work before anything else even hits the glass. White saba brings a quiet sweetness, lemon keeps the whole thing honest, and then the red w**e reduction gets floated on top, poured slow enough that it sits as its own layer rather than folding into the drink.

That float is the whole point. Tilt the glass and the w**e moves through the rye on its way down, so the first sip and the last sip are never quite the same drink. Technique is doing the storytelling here, not garnish.

Skipping the booze doesn't mean skipping the craft.

The low ABV and no ABV list gets the same treatment as everything else behind this bar: proper acid balance, house-made shrubs and cordials, bitters doing the work alcohol usually gets credit for. Same technique, same attention, just a different proof point.

Not every night calls for a full-strength pour, and now there's a whole category built for the ones that don't.

Meet the Howler Monkey.

Cane spirit forms the backbone, but the real work's in what's built around it. The banana skin cordial is made in-house, skins we'd otherwise bin, reduced down until they give up something genuinely worth drinking. Pandan cream gets its own process too, infused slow enough to pull real flavour without turning heavy or sweet. Pineapple and lime keep the whole thing bright, so what lands in the glass is tropical without ever tipping into dessert.

It reads like a dare on paper. In the glass, it's some of the more considered work on the list. Come find out why it's called the Howler Monkey.

This year's Floriade theme is Feast of Flowers, so we built the list around it properly.

Espliego - leans into the lavender itself, tequila and lime keeping it sharp while strawberry rounds out the sweetness, a love letter to the flower it's named after.

Pollinator - takes the bee's side of the story, rye and chamomile doing the floral work while peychauds adds the depth a pollinator's day clearly deserves.

Birds & Bees - finishes the ecosystem gin, elderflower, honey and lemon, light and bright, built to taste like the whole garden decided to cooperate for once.

Three drinks, one theme, zero subtlety when it came to naming them. Come try them while the season's on.

October 31st, Rohan's hosting a hands-on cocktail class built around the holiday. Halloween drinks, real technique, zero pressure to get it right the first try. You'll shake, stir, and walk away having built one yourself, plus a tiki mug to prove you were there.
