This was my first batch of Worcestershire sauce back in 2021 in Portugal, where itโs known as Molho Inglรชs ๐ต๐น or English Sauce ๐ต๐น
Apples, plums, tamarind, chilli, cloves, pepper, allspice and treacle, then left to ferment and develop that deep, rich flavour. Itโs always been a slow process, but well worth the wait.
Since then Iโve heard it called all sorts of thingsโฆ one customer here says itโs known as โWash Your Sister sauceโ in their house. ๐
Iโm half tempted to do a limited run of labelsโฆ
Iโve just laid down a new batch this week and I also have a limited number of bottles that have been maturing for 9 months ready to go.
