Low seats, green tones, tiled surfaces, a bar close by. Thai and Mexican ideas run through the food, chilli, lime, coriander, smoke, fermented dressings, tortillas, while the bar keeps agave at the centre. Come in for one drink, end up with tacos, order something smoky, pretend this was the plan.

Pork jowl taco with nahm jim jaew pla ra and coriander. Pork jowl is prized in Thai cooking, at LOS, it’s grilled slowly so the fat renders and the edges crisp, then dressed with a fermented fish nahm jim jaew — a Thai dipping sauce built on chilli, lime, fish sauce, herbs and deep savoury funk. The Mexican side comes through in the tortilla.

Jalapeño Business. Mango, vodka, lime, mint, jalapeño, soda. It's built like a highball but dialled in. Sweetness from the mango, acid from lime, heat from the jalapeño, all kept in check with length and carbonation. It reads playful with its light, fizzy, easy — but it’s doing a bit more underneath. Balanced properly, so it holds up past the first sip and long into those evenings.

Guac and chips, reworked. Instead of avocado, we use taro. Steamed down and mixed with tomato, shallots, chilli, it gives that same creamy base but with a bit more weight and texture. From there it shifts. Snake bean seasoning, heat, a sharper edge. The kind of flavour profile you’d expect from Thai cooking, layered into something that still reads familiar on the table. Corn chips on the side, fried crisp. A crossover that was meant to be.
