Spring is knocking on the door, and we think that calls for a celebration! 🌸

Our Gold Medal-winning Elderflower Liqueur (Sydney Royal 2025) is made right here in Bowral using local honey and freshly harvested elderflower. Pour it over prosecco, add a splash of soda, a wedge of lime, and fresh mint — and suddenly, PURE SUNSHINE in a glass. ☀️

When you visit us, you won't get a scripted presentation or a rehearsed sales pitch. You'll get a genuine conversation with the distillers and the team behind the bottles.

We'll take you behind the scenes, show you how our spirits are crafted, explain the botanicals we use, and share the successes, mistakes and experiments that have helped shape Millsheds into what it is today.

Then once the tasting is over, there's no rush to leave.

A milestone worth celebrating! 🎉

Back in April, we had the honour of being invited to the prestigious Destination NSW New Product Workshop — held at the stunning Capella Sydney in the heart of the city.

This exclusive industry event brought together the very best of NSW tourism, connecting operators like us with travel trade buyers, agents, and wholesalers from across Australia and beyond. And right there at Table 16, we got to share the Millsheds story.

We showcased our award-winning Southern Dry Gin and Highland Gin — both recognised with silver medals at the London Spirits Competition and IWSC — and spoke about everything that visits our Southern Highlands distillery so special:

- Hands-on gin blending masterclasses
- Guided distillery tours
- Intimate tastings in our beautiful bar
- Our stunning Bowral venue for events and gatherings

Being part of this workshop is a real statement of intent. We're committed to putting Millsheds — and the Southern Highlands — firmly on the map for visitors from around Australia and the world.

Meet Highlands Gin — our floral, spicy and beautifully layered signature gin inspired by Bowral in bloom during Tulip Time. 🌷

Crafted with 16 botanicals, this gin opens with fresh lavender, rose petals and citrus before evolving into earthy cassia bark, cardamom, native pepper berry and myrtle for a long, warming finish.

Adelaide, you absolutely delivered! 🎉

We're still buzzing after our time at the Australian Tourism Exchange 2026, and what an incredible experience it was.

For anyone who doesn't know, ATE is THE event where the deals happen that bring the world to Australia's doorstep. This year, more than 2,700 delegates gathered at the Adelaide Convention Centre — hosted in partnership with Tourism Australia — including over 700 international tourism buyers from 32 countries. These are the world's most influential people in international tourism, deciding what visitors from around the globe get to experience when they come to Australia. And our small-batch distillery from Bowral was on that stage. 🥂

Millsheds was proud to be featured at the NSW Happy Hour alongside the crew at Archie Rose Distilling Co. — and together, we did something pretty remarkable. In under two hours, we made 540 drinks for that room. 540!

The clear crowd favourite? Our Elderflower Collins — Millsheds Highland Gin and Elderflower Liqueur, fresh lemon juice, topped with soda. Bright, floral, refreshing... it went fast. Very fast.

Seeing Millsheds on the big screen at the Feel New South Wales stand, in front of buyers from 32 countries — that was a moment we won't forget in a hurry.

A heartfelt thank you to Destination NSW for the incredible opportunity and for shining a light on NSW's world-class food and drink producers. We are so proud to represent the Southern Highlands on that stage.

The Highlands made its mark in Adelaide — and we reckon we'll be back soon! ✌️

It's Gin o'clock all weekend, we just released a new batch of our favorite Bramble Gin🍓

Bramble Gin is our love letter to the Southern Highlands — built on our two award-winning gins, blended with real blackberries, strawberries, blueberries, and raspberries through a slow reduction process that draws out every drop of natural sweetness. No added sugar. Just fruit doing exactly what fruit does when you give it time.

The gin comes through first — citrusy, spiced, properly botanical. Then the berries arrive and the whole thing just lights up.

On ice, it's perfect. With Fevertree Elderflower Tonic, it's a little bit dangerous.

We are behind the bar all weekend. Come try it for yourself. We'll see you down here. ✌🏻
