CALLUM
Callum joined us fresh off the boat from New Zealand and even though the way he would say botanicals over and over again was ridiculous, his enthusiasm and easy charm won everyone over. We only got to put together one rushed cocktail menu but the work Cal put in delivered some of our most popular drinks. Cal is now bartending at Old Mates Place, if you haven’t been please go and challenge Cal to a dance off, you will have the time of your life.
Thank you Cal for being a great person and at a time when things were going to s**t a little for me, recognising this and standing by me. I won’t ever forget it. You are an incredible person mate, you can achieve anything that you want to if you put your mind to it. I look forward to staying in touch and seeing how you grow.

KELSEY
Kelsey joined us coming out of the last official lockdown and boy did we go through some times! The highlight was probably the $9k night when it was just Kelsey and I front of house with my mum on the door checking people in and my dad washing glasses and juicing citrus. Wild. That and finding the empty hip flask stash of a certain wayward staff member…
Kelsey and I share a similar story of what is to be Australian and it was a real pleasure to explore this with her.
Thank you Kelsey for joining us at a time that was very difficult, I probably would have had to write these posts in October without you. You really helped galvanise who we are, crazy that this could happen three years into the business! It’s a shame that things had to finish as they did, I feel like we never really got to finish what we started.

I’m not going to lie Manuel, you weren’t always the easiest to work with. But we did go through a lot together. Cooking all those at home meals over lockdown was a real highlight, getting to see the joy on people’s faces from your cooking at some of the darkest times was a real honour.
Thank you for all of your hard work and passion (too much sometimes 🤣) and our menu was some of the best food we put out while you were around! I’m glad that we were able to make a way for you to stay in Australia through all of this.

Tani joined us fresh off the boat from Tassie. Like a duck to water, you already knew many of the Aussie wines & spirits we specialise in but you threw yourself in to the rest of it and connected with the locals brilliantly. Let’s just not mention how long the river mint cooler went without mint shall we? 🤣
Thank you Tani for all your work and all of the love and care you put into this place. While you were here everything felt warmer and more cared for. Plenty of locals still remember the “girl from Tassie” because of your breezy charm. Tani is now rocking it as the venue manager at the Roosevelt in Potts Point, if you’re in the area go and say g’day.

Jack, where do I begin?! Compared to most of our key staff, you probably learnt less about what we sell than anyone else but because of who you are you got away with it. We sold more spiced rum while you were here than we did before or since. That kind of sums it up. 🤣
Thank you Jack for bringing your boundless enthusiasm and energy to every shift, you lit up the room whenever you were around and made every shift you were on a party. Luca, this photo was too good, it had to be shared! Despite what you might think from this photo, Luca was always the consummate professional and understood about the business’ priorities better than most. A chef with empathy = hen’s teeth.
Thank you Luca for taking our menu to a new level and making it the bistro I wanted it to be. Your food got us noticed and built our reputation as something more than a bar. It was a pleasure to work with you again at R&F and you contributed so much to who we are. Luca is now the head chef at Nour restaurant in Surry Hills. Go check it out, he’s killing it.

EMMA
Emma was our first member of the team who joined once we’d gone a little way to establishing what Rosenbaum & Fuller meant. Dedicated and passionate to her craft, Emma had been working in hospitality for years but had not yet been making drinks. This what she was very hungry for. Emma put her head down and worked hard on her craft, I remember her hating kombucha at first, but after some months we had run out of scoby puns. I still like scoby doby do.
Thank you Emma for all your hard work and efforts, we still have some of your regulars asking after you from time to time, a true measure of your impact. Emma is now the bar manager at (from where I stole this pic as Emma takes forever to get back to messages) where she continues her journey, keep an eye on this big dog!

DAN
Dan was one of our first chefs at Rosenbaum & Fuller when we were still trying to do the brekky into day & night thing. We had previously worked together in 2008 at Rum Diaries and got on well. Always affable and positive at a very stressful time for us all, Dan always had a goofy smile and if things went to s**t we could always finish with a beer and a laugh. Always a great chat and endless music rants back and forth. Thank you Dan for always keeping the kitchen on an even keel. Dan’s now back in Canada and I’d love to come visit you as a family one day mate!

TOBY
Toby was the first person who really understood my wild ideas and didn’t look at me like I was mad when I tried to describe what I wanted Rosenbaum & Fuller to be.
He helped inspire a lot of the drinks that were immediately early winners, inspired some of our first regulars, but probably most importantly, inspired our first crew of staff with his boundless enthusiasm and passion for development.
Toby was always heading out of hospo and this was kind of a stepping stone for him but we were blessed to have him as part of our crew early on. He’s now working as a teacher and I’m sure inspiring the next generation to remain curious.
Thank you so much Toby, the first steps along the path are some of the hardest and you made them joyful and inspired others to create.
