This is how guns are built. Behind the bar, shaking Whisky Sours. 🥃 Every sour gets the full double-shake treatment. One to build the texture. One to create that silky foam.

By about the twentieth one of the night, the crew are digging deep and the bar muscles are making an appearance.

Worth it though.

OK, so secret’s out, Gin Palace is making its (maiden?) voyage to Adelaide and taking over our laneway bar on a quiet Tuesday in June….

For years, it’s been one of those Melbourne bars bartenders quietly recommend to each other…. Big martinis, fancy G&Ts, old-world hospitality. The sort of place you disappear into for “one drink” and emerge several hours later slightly shinier than before.

So to have it docking into Gilbert Place for a night….. well, it’s humbling.

Jack and Jacob from Gin Palace will be behind the bar pouring 90mL Martinis, cult cocktails, elegant G&Ts and Melbourne’s most legally protected chicken sandwich…. complete with a rack of bacon salt and Tabasco on the side.

There’s even an NDA involved. Which somehow feels very on brand!

We suspect it may get slightly out of hand in the best possible way.

All part of Bartender’s Weekender, and pouring Never Never Distilling Co.

Pouring blindfolded probably isn’t recommended… but when you’ve done it this many times, you back yourself.

Hains & Co once accused a bloke of being a bootlegger… turned out he actually was.

That first case from Prohibition Liquor Co kicked off a proper Adelaide story.

This week, Hains is raising a glass to where it began - poured properly with Fever-Tree tonic.
