Von der Wurzel bis zum Blatt

Vegetarische Küche ist mehr als nur Gemüse, das stellen unsere KöchInnen täglich unter Beweis. Und je nach Saison verwenden wir Produkte, die unsere LieferantInnen aus der Region frisch vom Feld zu uns bringen. Dabei begeben wir uns auf die Suche nach besonderen Raritäten, experimentieren mit unterschiedlichen Gar- und Fermentations-Methoden und tüfteln bis zur letzte

n Minute am perfekten Teller. Und da wir das gesamte Produkt von der Wurzel bis zum Blatt verarbeiten, entstehen in unserer Küche eben nicht nur Gemüsevariationen aller Art, sondern auch die herrlichsten Fonds, Gels oder Essenzen. Wir glauben an das Gute, doch wir kämpfen für das Beste. Unsere Stärken sind Qualität, Kreativität und Handwerkskunst. Unsere Basis sind biologische, fair erzeugte Produkte. Respekt vor Natur, Mensch und Tier schreiben wir uns auf die Fahnen. Als einziges vegetarisches Restaurant in Österreich hält das TIAN seit 2014 einen Michelin-Stern sowie vier Hauben von Gault Millau (18 von 20 Punkten).
