The harvest at Dibba Bay is nothing like an industrial operation. Every lantern is lifted by small cranes, every oyster graded, and every shell returned to clean water at the precise density needed for the next stage of growth. Our chefs witnessed the full process as part of our Hilton 50-Mile documentary series. And they learned something else: the oyster shells from our table are returned to Dibba Bay, where they become a reef substrate — habitat for the ecosystem that produced them. Every oyster on our menu begins as a four-millimeter shell in a nursery on the shore of Dibba – Fujairah — just 80 kilometers from our kitchen.
