Recipe Serves 4
You'll need:
1 x Slice Rooibos & Rye Bread Soaked in 150ml Milk
500g lean beef
2 x Carrots, Chopped
2 x Red Onions, Chopped
1 x Tsp. Turmeric
1 x Tsp. Cinnamon
2 x Tsp. Medium Curry Powder
1 x Tsp. Ground Coriander
1 x Tsp. Garlic Powder
1 x Garlic Clove, Chopped
1 x Tbsp. Extra Virgin Olive Oil (EVOO)
4 x Eggs Beaten
Bay Leaves
Get cooking:
- Preheat your oven to 180 degrees.
- Soak your bread in 150 ml milk and set aside.
- In the meanwhile, in a casserole add your EVOO and chopped garlic clove and fry for about a minute or until fragrant.
Once fragrant, add in the mince, onions, carrots followed by turmeric, cinnamon, curry powder, garlic powder, and finally the ground coriander.
- Fry all the ingredients over low-medium heat, until your mince is nicely cooked and your kitchen smells like absolute heaven.
- Remove your soaked bread and add it into the mixture. Ensure that you mix the bread into the Bobotie mixture so that there are no pieces of bread left. Add the remainder of the milk and leave it to simmer for about 2-5 minutes.
- Remove your casserole from the heat and add your beaten eggs as a layer on top of your Bobotie mixture. Finally, finish the dish off by adding your bay leaves.
-Bake in the oven for about 25 – 35 minutes or until your Bobotie is golden brown and delicious.
Serve the Bobotie with either Jasmine Rice or Couscous.
