Meet our new Assorted Mushroom Skewer, a smoky, rustic bite made for those who love their flavours bold and their dining experience a little more hands-on.
Oyster and Shiitake Mushrooms are stacked onto a hearty skewer, grilled until beautifully smoky, then finished with our rich signature Smoked Mayo for a deep, savoury umami hit.

𝗦𝘂𝘀𝘂𝗿’𝘀 𝗣𝗢𝗩

🌙✨ Cavern After Dark was more than a dinner. It was shaped by the kitchen’s energy, the immersive cave-like setting, and the moments shared around the table.

At Cavern Restaurant, nestled within Mandai Wildlife Reserve, I found a different kind of inspiration. The space felt raw, natural and full of life, where food, nature and wildlife came together in the most unexpected way.

Inspired by Singapore’s rich culture and the wild spirit of Mandai Wildlife Reserve, one dish became especially meaningful to Jet and me: 𝗝𝗲𝗿𝗸-𝗦𝗽𝗶𝗰𝗲𝗱 𝗟𝗮𝗺𝗯 𝗖𝗵𝗼𝗽 𝗣𝗮𝗻é with banana & sunchoke purée, pavé potato, confit artichoke, spiced pineapple, Jamaican rum & passionfruit glaze.

Bold, earthy and layered with flavour, it captured the evening beautifully.

And now, this signature dish will continue to feature on Cavern Restaurant’s regular menu, so guests can experience a taste of Cavern After Dark beyond that one special night.
