The Red Cask Company pride itself on high quality sherry whisky however some people may now know a lot about the dark fortified wine that gives our cask such varied colour and flavour.

Sherry is typically made from one of the following grape varieties: Palomino, Pedro Ximénez (PX) & Moscatel. Palomino is the most popular variety and is used exclusively to create produce dry sherry. PX & Moscatel grapes aren’t as common as palomino and are used more in the creation of sweet sherry.

PX & Moscatel grapes are sun dried for several days, evaporating the grapes water content and concentrating the sugars, resulting in a sweeter taste. Palomino grapes are immediately pressed once harvested. These re pressed in two stages. The first pressing stage extracts lighter grape juice, which is used for making Fino sherry. The second pressing creates a bolder juice, which is usually destined for making Oloroso.

Oak barrels or steel tanks are used for fermenting the juices into white wine. Pedro Ximénez and Moscatel wines are only partially fermented, as opposed to complete fermentation, they are fortified sooner.

Sherry barrels are aged in cellars called “Bodegas”. They typically consist of 500-litre butts. The barrels are made from porous North American oak, allowing for a greater level of air exchange between its contents and the outside environment.
For this reason, the sherry-seasoned casks that have become popular for ageing scotch whisky, such as the Red Cask Company.
