We opened Bar Susu as a pop-up, so it only feels right to end things the same way!

To help close out our final month, we’ve invited Mark Singson to take over the kitchen for four nights.

Mark’s a Filipino-Canadian chef known for his bold flavours, sharp technique, and no-holds-barred creativity. He’ll be serving up a special menu that highlights Filipino food in a way that’s entirely his own, fresh, thoughtful, and full of his personality.

And in true Susu fashion, we’re also using this as a chance to support something bigger. Guests will have the opportunity to donate to those affected by the Lapu Lapu Festival incident in Vancouver.

For those looking to still try some of our throwback menu items, we’ll be serving them up alongside Mark’s menu, so if you’ve been meaning to stop by for one last meal with us, next week is the time!

Reservations recommended, but we always have room for walk-ins.

We’re excited to bring a few of our favourite dishes from the past few years back to the menu this weekend! The Honey Cruller and Sablefish with Tom Kha sauce both became two of our top sellers during chef Ash’s time with us and the Tapioca Cheese Bites by chef Marc were definitely one of our signature snacks while he was here.

We’re excited to welcome a few more dishes next week as we continue to revisit some of our fondest memories in our final weeks.

We were planning to stay closed today, but we just couldn’t resist.

The Vancouver sun is out and our patio’s calling so we’re opening the doors for a little cheeky bar and patio service tonight featuring a pared-down menu while we get some of our throwback features ready to roll for Tuesday.

After three unforgettable years, we’ll sadly be saying goodbye to Bar Susu on May 30, 2025.

What started as a pop-up turned into something so much bigger — a space for playful food, late-night cheers, great wine, and a community we’ll never forget. Through relocations, fires, and all the ups and downs, Susu always found a way to stay true to what made it special.

Between now and May 30th, we’ll be bringing back some of our favourite dishes and drinks from over the years and a few other gems from the archives.

We’ll be closing this weekend as we regroup our menu but will reopen starting next week running Tuesday through Saturday until the final night. We’d love for you to come raise a glass with us — whether for one last visit, or a few.

Thank you for being part of Susu’s story. We’re so proud of what we built together.

Strega – our unofficial house spirit (don’t tell the others).

Sweet, herbaceous, minty-fresh, and unapologetically yellow—thanks, saffron. It’s a liqueur made with 70+ botanicals spanning Europe, Central America, and Asia. Distilled with a swan-neck still. Aged in wood. Named after witches. Yes, actual witches.

Think honey, anise, orris root, juniper, nutmeg, and a little piney menthol for good measure. Syrupy by nature, but best served cold or over ice to keep things snappy.

It’s the potion we reach for more often than we’d like to admit.

🧊 On the rocks is how we like it.
