Start with an apero… something crisp to awaken the appetite. Maybe a negroni. Or a ‘broken’ negroni sbagliato, made with prosecco instead of gin. Prefer sweet and bubbly? A bellini - classic peach, or go tropical with mango or passionfruit.
On our grill menu there’s imported Asian water buffalo, Australian grass-fed beef and wild Pacific salmon. From Vietnam there’s chicken from the Mekong Delta and pork raised locally here in Phu Quoc.
Fine ingredients + proper technique + woodfire!
Flame-grilled over binchōtan (Japanese white oak charcoal), water buffalo filet mignon and beef sirloin are paired with fresh, herby chimichurri; pork loin is glazed in rich, sweet teriyaki and served with white miso mayo; chicken and salmon get the warm hug of Portuguese peri-peri and a garlicky kiss from creamy aioli.
Pro tip: If you love beef and haven’t tried Asian water buffalo, you’re seriously missing out. Beefier, juicier and buttery-er than beef, filet mignon - the prime cut - is tender, toothsome and so full of flavour.
If you’d like an appetiser, or just a snack, there are handmade sharing plates: Green gazpacho made from fresh local herbs and vegetables, salt-baked beetroot with Venezuelan guasacaca, sweet and briny Phu Quoc white clams in garlic butter - lighter options with bright, bold flavours.
Crispy chicken breast tossed in gochujang sauce is spicy-salty-sweet, crunchy and tender - great beer food. Our purple-pink hummus is made daily and enriched with beet juice.
Some cheese? Baked French Camembert is meltingly smooth and rich, Taleggio from Italy is mature and pungent. Red onion chutney is the sweetness, pickled shallots the sharpness, confit garlic makes everything even better.
And on to dessert… Olivia’s special is cà phê đen đá ‘affogato’ - homemade coffee ice cream covered in a shot of Vietnamese coffee martini. And while they’re in season, there are sweet, ripe local strawberries with whipped cream and dulce de leche. Or maybe a strawberry daiquiri from the cocktail bar… Or an old fashioned… Or…
Anyway, here’s our latest menu and a few new pics. We’re open for reservations and walk-ins 5pm to 11pm daily (closed Tuesdays).
