Burger Sauce

1/2 cup GOOD Mayonnaise - I use Duke's
3 tbsp ketchup
2 tsp brown deli mustard
2 tbsp dill pickle, chopped finely
pepper to taste
1/2 tsp white vinegar
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp paprika
1/2 tsp worchestershire
dash or two of hot sauce (I like Texas Pete)

Add all ingredients into a bowl and stir to combine. Cover and chill in the fridge for at least a couple hours to allow flavors to develop. Stir and serve.

So, it's been a while. We're breaking the cycle with something easy and basic.

Yup. Ubiquitous, creamy Ranch. But, not boring; the fresh onion and garlic with the dried Dill and Thyme makes for a refreshing and light flavor that makes you realize why we like Ranch so much. It will ruin you for the bottled stuff forever, but we're honestly not sorry to see that bland, overly-sweet stuff go. It comes together in 10 minutes, chills for a couple of hours, and lasts for a week (if you don't eat it all first.)

In this form, it works very well as a dip or spread, but if you cut the sour cream with a little Buttermilk, it becomes more pourable.

A "good biscuit" is subjective to taste; Some like epic fluffiness, some like dense tenderness, others like flakiness for days. For me, I like a tender, slightly fluffy biscuit with just enough flakiness to allow for easy splitting open.

The mix of fats is the key, here. A little shortening for tenderness, but mostly butter for flakiness and flavour. Second to the fats is the flour. I'm lucky enough to live in the south where we have White Lily and Martha White flours that work perfectly in biscuits due to their low (8-9%) protein content. But, a good low protein pastry flour will do if those brands aren't available. Just don't use bread flour or over mix your dough or else you'll get heavy biscuits.

To make Garlic Cheddar Biscuits, add 2oz super sharp cheddar that's been shredded to the flour mixture and add garlic and herbs to taste to the melted butter you add on at the end. To compensate for the cheese, you might have to add a little more buttermilk, but you prepare the biscuits the exact same way.

Soup? In July?? Fear not; This is a lighter, vegetarian soup that will satisfy without being overly filling. The light smokiness from the smoked paprika and the rich vegetable stock will give you a flavourful soup. And, with the use of canned beans and frozen vegetables, a very quick one. Of course, you can use dried or fresh beans and fresh veg if you'd like.

The secret to a good soup is layering flavours. In this simple soup, you'll spend a small amount of time reducing liquids to concentrate and bring out flavours that are surprising for such a quick soup; from start to finish, you'll clock less than an hour of stove time.

Iced tea, if you're the tea-drinking type, is a summer requirement! Another nice iced tea option is steeping fresh mint leaves in hot water and adding sugar to taste; it's light, refreshing and not heavy in the least.
