We found out this week that Justin scored a job as a brewer at Barreled Souls in Maine. We're just about as proud and happy for Justin as we can be.

It's sometimes hard to believe that we started out with aspirations but not really expecting things to go this well. I guess when you stick to the plan great things can and will happen.

We are approaching the end of our 3rd year with this Flanders Red Solera. Our secondary is a 60 L Speidel fermenter. Our project started on Black Friday almost 3 years ago. We each brewed and fermented a 5 gal. batch then racked it to the Speidel. We maintained 80°F for the first year. The following Black Fri., one year later we brewed one 5 gal. batch to ferment and replace the 5 gals. we were going to pull and bottle. The resulting beer surpassed our expectation and is just getting better with age. (What's left of that pull). To our last pull we added 10 lbs. of Autumn Olive berries. An invasive plant that grows wild. The resulting brew was everything we hoped for and more. Not sure what we'll do with this years pull but we'll think of something I'm sure.
