Our dear friend, Aria Pelaez (age 9), had the chance to meet Barack and Michelle Obama at the Healthy Lunchtime Challenge on July 10, 2015. She created dishes with creative names such as "California Rainbow Taco with Mic-Kale Obama Slaw" and "Barack-amole". Please help her pay-it-forward so that we can promote healthy eating amongst kids.

Guacamole has been in the food news lately (no peas!), but it was Barack-amole that won 9-year old Aria Pelaez of San Francisco some attention at the White House recently. As The Chronicle's Carolyn Lochhead reported (http://bit.ly/1h5YoSl), Aria's dish represented California in last month's Kid's S…

Awesome class with these lovely girls! Loved the idea of a Valentine's Day-themed birthday party. Within 5 hours, they created one heart-shaped cake, a dozen of cupcakes and lots and lots of chocolate chip cookies. Sugar overload!

Happy Friday, sweethearts!

A cute little interview we did with a 4th grader.

1. How do you make cakes?

Great question. First, you start with reading the given recipe thoroughly, then you create a shopping list of all of the ingredients that you will need to bake the cake from scratch. Then, you follow the instructions carefully to create a cake.

2. What do you put in the cake?

Typically, the basic ingredients of a cake comprises of eggs, sugar, butter, flour, a leavening agent such as baking soda or baking powder (this is what makes the cake rise), vanilla extract and other things depending on what you make. After you bake your cake, you will have to cut it horizontally to create layers. To assemble your layers, you will want to soak it with simple syrup (plain or flavored) to create a moist texture and then fill each layer with buttercream/jam/fruits/whipped cream/etc. Once you have that, you will need to frost it, then garnish it.

3. How did you become a Pastry Chef?

After I graduated from San Francisco State University, I pursued a culinary degree from the California Culinary Academy. I knew I wanted to focus on baking, so I enrolled in the Baking and Pastry Arts program.

4. When do you make cakes?

I make cakes whenever I have to cater to a wedding, birthday or office party. And, sometimes I make them for friends.

5. What school did you go to learn how to be a Pastry Chef?

I attended the California Culinary Academy in the Potrero Hill district here in San Francisco.

6. How do you make characters out of frosting and dough to put on a cake?

You can sculpt characters out of fondant or marzipan, which is sort of like edible play-doh. You can also pipe out drawings of characters using colored buttercream by placing the contents into a pastry bag with the corresponding pastry tip. But, that all depends on what you want to create.

7. What is your favorite thing to eat?

That is a hard question! I love to eat, but potatoes and tofu are just a couple of my favorite things. I know what you are thinking, yuck! I also like thin-crust pizza, fresh pasta, yummy tacos and any kind of hot noodle soup.

8. What is your favorite thing to bake?

My favorite thing to bake would be chocolate chip cookies because it is simple and I can eat them all day long!

I hope that helps and good luck with everything!

Chef Michelle
