𝙈𝙀𝙉𝙐 𝘿𝙍𝙊𝙋💥Machetes x Toya is 𝖆𝖑𝖒𝖔𝖘𝖙 here, & this menu is exactly the kind of stuff that gets us fired up about collaboration dinners. Both teams are bringin’ something new to the table, & we’re stoked to have Diego & McKenna in the house Tuesday night!

The lineup for this one is stacked— from an epic Seafood Tower Trio loaded with oysters, scallop aguachille, ceviche & shrimp, to braised short rib Birria Ramen, Sope de Lengua, Bokchoi Tételas, Lan Roc Toncactus, & Uni Flan for dessert!

& the bar team is doing what they do best— showing up with bangers‼️ A few returning favorites, a few brand-new creations. Expect Ojisan Micheladas, Golf Water, Miso-Caramel Horchatas, Mole Negro Milk Tea, Hibiscus Paloma Blendies & a handful of fresh builds made specifically for the night.

We’re diving deep into the summer menu switch up at Toya & Yuzu Shio is leading the charge‼️ 
Built on a crystal clear chintan & dashi broth with shio tare, layered with yuzu kosho & fresh yuzu juice for that sharp citrus lift that keeps every sip feeling bright, savory, & super clean. Finished with pork coppa, chicken breast, foie pork + chicken meatballs, ajitama, pea tendrils, negi, & nori. 
As the weather warms up, the kitchen is leaning toward bowls that feel a little brighter, a little lighter, but still carry all the depth, care, & comfort we love building into the menu.🍜 The kind of bowl you can pull up for at lunch, settle that after work craving, or make a part of your routine all summer long.

Portland Mercury Highball Week has arrived— & this one’s bright, layered with citrus, & unmistakably Toya.⚡️

𝙎𝙪𝙙𝙖𝙘𝙝𝙞 𝘾𝙝𝙪-𝙃𝙖𝙞
Hornitos Plata tequila, Awa no Kaori Sudachi-Chu, lemon cordial, yuzu juice, soda water.

In Japan, highballs are meant to drink easy — cold, sparkling cocktails with sharp carbonation & clean balance. Shikoku shochu distilled with sudachi, a tart Japanese citrus somewhere between lime & yuzu, meets the citrusy, mineral tones of blanco tequila, while mad effervescence from the Toki Highball machine combined with yuzu juice & lemon cordial makes this Chu-Hai a total crusher.

From May 25–31, Portland Mercury’s Highball Week brings together bars & restaurants all across the city serving special $10 cocktails all week long, basically turning the whole week into one big Portland cocktail crawl. 🙌🏽

Husband & wife team Diego & McKenna of .pdx have built something really special here in Portland — centered around the flavors of Mexico City, deeply rooted regional cooking, & the kind of street food culture built around feeding people with heart. ❤️‍🔥

There’s something really exciting about how naturally these two food cultures speak to each other. CDMX street food is bold, vibrant, comforting, layered with texture, & built around everyday gathering — the same spirit that makes Japanese comfort cooking feel so special. For this dinner, chefs are blending those influences into a menu that feels playful, nostalgic, comforting, & full of unexpected combinations.

Toya happy hour is back & better than ever! 🍜🥃
𝙀𝙫𝙚𝙧𝙮𝙙𝙖𝙮 𝙛𝙧𝙤𝙢 3–5𝙥𝙢 the HH menu is stacked with cold highballs, Toya chu-hais, house martinis, old fashioneds, sake, lagers, seasonal bartender specials, & bowls of Toya Essential Ramen — all built with the same level of care that keeps the room buzzing from lunch into late night.

With prices everywhere climbing these days, putting together a happy hour that feels approachable, & genuinely worth pulling up for was really important to us.

The bar team is always throwing down!💥 Nothing lands on the menu by accident — every ingredient gets played with, balanced, reworked, tasted again, & built with curiosity until it feels just right. 
This new one’s a little fruity, a little peppery, super refreshing, & real easy to sip for something with a little kick behind it.

Old Grand Dad 114, Control Pisco, strawberry, clarified lemon, green & black pepper, junmai sake, finished with CO2.

That constant intention is what keeps the lineup moving, seasonal, & fun to come back to. Thoughtful cocktails & a zero-proof menu that still feel easy to drink, exciting without taking themselves too seriously.
