That’s just how things work 😉.
Today’s new batch: Apple Lychee Mead.
Fresh lychee fruit and apple juice going into the fermenter today. Now the yeast gets to do the hard work.
If you’ve never had lychee before, it’s a tropical fruit that’s kind of like a mix between grape, pear, and rose.

Today marks the beginning of a bold new project. Tempranillo, Grenache, and Cabernet blend.

This wine is all about movement and personality: energetic, expressive, and alive with character. Using our dual-yeast fermentation strategy (VRB + CLOS) and precise, cool temperature control in the SS Brewtech system, we’re building a red that’s deep, layered, and full of dimension.

Projected Tasting Profile:
• Black currant
• Ripe raspberry
• Rich dark fruit
• Warm sweet spice
• Silky, velvety texture

We’ve been a little quiet on pictures and videos lately… but that’s only because we’ve been deep building a lineup of new batches. The tanks haven’t taken a day off. Here’s a sneak peek at what’s coming.

Here’s what’s fermenting, aging, and getting dialed in right now:

🍒 Cherry Bourbon Lactose Vanilla Reserve
Silky cherry dessert mead layered with warm bourbon notes, soft vanilla, and a touch of creamy lactose.

🌴 Mango Colada Mead
Tropical, smooth, creamy mango, natural coconut, and a hint of vanilla.

🍁 Blueberry Maple Bourbon Mead
Deep jammy blueberry flavor with dark maple sweetness and warm bourbon-oak depth.

🫐🥜 Blueberry Cashew
Bold blueberry body, buttery cashew richness, and velvety vanilla.

We’re excited to announce the next batch of Pistachio Pixie Dust is being bottled. This one is special because for months now, we’ve been crafting the no-water version, letting nothing dilute the bold flavors of port-aged blackberry, blueberry, raspberry, strawberry, blueberry, white chocolate and pistachio. The result? A rich, full-bodied mead that captures the magic we’ve been chasing from the very beginning.

This label is extra close to us. A huge shout-out to Jami Harrington whose creativity and artistry brought the pixie to life. The design perfectly captures the whimsical spirit of this mead, and we’re proud to showcase her work every time someone picks up a bottle.

At 15.75% ABV, Pistachio Pixie Dust is as enchanting as it is powerful.

It’s been ten years since we've made a batch of coffee liqueur, and we decided it was time to bring it back. This year’s batch is called Buzzing Eclipse. It’s crafted with Onyx Eclipse Coffee for a bold backbone with dark chocolate and caramel notes, Myers’s Dark Jamaican Rum for rich molasses character, pure cane sugar for natural sweetness, and Madagascar vanilla beans for a smooth finish.

The small 187 ml bottle in the photo is the very last pour from the batch we made a decade ago. Now we’ve got a fresh gallon resting in carboys, right on schedule to be bottled and enjoyed just in time for Christmas 2025. Patience is the secret ingredient, and over the next several weeks the coffee, rum, and vanilla will come together into something smooth, decadent, and unforgettable .
