Hops was founded with the intention of providing fresh, locally grown hops for the brewers (professional and amateur) of Northern NJ. Most importantly, we seek to add to the collaborative spirit found in the local craft beer community.

It begins in the Spring , as deep purple shoots emerge from the ground. Amongst the many, the best shoots are selected and trained. June gives way to the explosive ascent up the coir. Throwing laterals and pushing flowers are July's agenda. August is a conflict of pace - anticipation for harvest makes for a crawl at the start. Once the senses align: touch - papery, tacky; smell - pungent, woody, lemongrass; visual - green has darkened, lupulin has deepened its yellow, and the bract tips have been speckled with touches of brown; sound - holding a cone to the ear and squeezing, listening for an almost styrofoam like sound as the cone reforms its shape. And lastly, the dry matter and moisture ratio is in agreement. It's time to harvest and the days to come are cyclical: pick, weigh, dry, package. Repeat.
It never gets old.
