With extensive experience in the service and hospitality industry across Louisiana, Connecticut, and California, Marcella Merrill brings decades of hands-on knowledge to the art of hospitality, event service, and business development.
A New Orleans resident for more than two decades, Marcella spent years as a bar proprietor, embracing the energy, pace, and culture of the city’s legendary hospitality industry through 2018. Her passion for creating memorable experiences eventually evolved into a vision for something uniquely her own: a professional mobile bar company. She decided she wasn't just in the bar business anymore, she was in the CELEBRATION business.
That vision began taking shape in 2017, when Marcella recognized the potential of mobile bars to transform the event industry in much the same way food trucks had transformed dining. She spent years developing the concept, refining her skills, and preparing for the opportunity to bring it to life. In 2020, that vision became reality with the launch of Geaux Mobile Bar Co. on the Northshore.
Since its inception, Geaux Mobile Bar Co. has grown into an award-winning mobile bar company recognized for its distinctive approach to event service, creative bar concepts, professional presentation, and attention to detail.
A Leader in the Local Business Community
Marcella has also been an active and valued member of the Covington Business Association for many years, contributing her experience, time, and leadership to the local business community. She most recently served as Vice President, a role she ultimately stepped away from as the continued growth of Geaux Mobile Bar Co. demanded more of her time and attention.
Her influence within the local mobile bar industry extends beyond her own company. As the mobile bar concept began gaining momentum throughout the Northshore, Marcella became a resource and mentor to other aspiring mobile bar entrepreneurs in the area. She has personally shared knowledge, guidance, business insight, and operational expertise with other mobile bar companies, helping entrepreneurs understand the business from the ground up.
Several local mobile bar businesses have developed their own brands and operations using principles and elements inspired by the Geaux Mobile Bar Co. business model—a testament to Marcella's willingness to share her knowledge and help grow the industry she helped pioneer in the region.
Rather than simply participating in the growth of the mobile bar industry, Marcella has played a role in shaping it.
