The ongoing quest for the perfect deviled egg. While the pictures do not do this justice, I present my Mexican street corn deviled eggs. The schmutz is pureed corn, lime zest, tajin, mayo, lime juice and a little dijon. Once filled, then a sprinkle of tajin, cotija cheese and some charred corn. Topped with chopped cilantro and a chili lime spiced popcorn crumble.
