What a day! We absolutely packed the place for the chili cook-off, and y’all showed UP!

Despite it being cold, windy, and aggressively winter-ish, the sun was out, the energy was high, and everyone was bundled like they were tailgating in Green Bay. On the bright side: our beers stayed cold. Nature’s refrigerator. ⭐️⭐️⭐️⭐️⭐️

Results time:
🥇 Bayou Born took 1st Place – Judges Choice
🥈 Hop Topic snagged 2nd Place – Judges Choice
🥉 Hodge Fencing landed 3rd Place – Judges Choice
🏆 People’s Choice Winner: Sailor Spice (the people have spoken, loudly)

Judging happened inside the climate-controlled brewery (because we’re civilized), and yes, we shotgunned beers over the floor drains. Hey, how else you gonna cleanse your palate? But seriously, all 9 chilis we judged were really good. It was a tough decision, and we deliberated quite some time. Maybe that was just an excuse to keep passing around the samples? Maybe.

Ye ole health department stopped by. I’ve never seen that happen at a cook-off, but hey! Everyone passed. Gold stars all around. Seriously, great job teams. 👏

We saw old friends, made new ones, froze our fingers off, laughed a lot, and proved once again that chili + beer + good people is a winning formula.

Huge thanks to Galveston Bay Brewing, all the cook teams, vendors, judges, tasters, and everyone who came out bundled up and hungry. This one was special.

Now excuse us while we thaw out and start planning the next one. 😌🌶️🍺

Since we’re hosting the Chili cook-off on the 31st at Galveston Bay Brewing, I’ve had a few people ask what they should bring and how to make it easier. This is what we do, after learning the hard way.

I prep as much as humanly possible at home. Chopping onions on-site sounds fun until the wind blows one into your soul.

Whatever heat source you’re using, bring more fuel than you think you need. Running out mid-event is a bad look.

A table and a 10x10 canopy.
You need a place to work, and shade is undefeated.

Ladles, spoons, tasting cups, gloves, napkins, paper towels. Then backups, because something always hits the ground.

A cooler.
Ingredients, drinks, and liquid courage all belong in here.

Stuff We’ve Forgotten Before

• Trash bags
• Hand sanitizer
• Wet wipes
• A towel for spills
• A Sharpie
• Chairs

Water. Chili cook-offs are fun, but dehydration sneaks up fast.

Things That Make the Day Way Easier

Prep at home.
Anything I can roast, blend, or chop ahead of time, I do. Outdoor kitchens are chaos.

Label everything.
Spices, utensils, coolers. Things wander. Need to borrow a sharpie? Odds are I’ve got one.

Keep the setup simple.
Fancy is cool. Simple works. We focus on the chili and the people. The rest will work Itself out.

Taste as you go.
Heat builds. What tastes perfect at noon can turn into a mistake by mid-afternoon. Know that It will eventually “come together”.

Talk to people.
Half the fun is the hang. Meet folks, swap stories, and steal ideas.

If This Is Your First Cook-Off

Don’t overthink it. You don’t need to be a pro or have a secret family recipe written on parchment. Bring your best chili, show up prepared, and have a good time. The rest takes care of itself.

🌶️ CHILI COOK-OFF RECAP🌶️

We showed up ready for freezing temps, bundled like we were camping in Alaska.
Instead, the weather was perfect, and we spent the afternoon peeling off layers like confused onions.

The chili did its job.
The people voted.

🏆 2nd Place – People’s Choice

We saw old friends, made new ones, talked some trash, learned a little humility, and shotgunned a few beers in the name of team bonding and questionable decisions. Thanks to Hop Topic and Equal Parts Brewing for putting this on!

Ever wonder what goes in to our award winning chili recipe? Well, here’s a little glimpse:

How we make our chili paste

We’ll start by admitting something upfront: making our own chili paste takes more time than opening a jar or shaking chili powder out of a bottle. We know that. We just really like how this turns out.
Our process starts with dried guajillo peppers. We stem and seed them by hand, because it gives us better control over the flavor. Less bitterness, more of that rich, earthy pepper goodness.
Next, the peppers get a quick roast—350°F for about three minutes on a sheet pan. It’s a small step, but it makes a big difference, waking up the natural oils and adding a little depth without pushing things too far.
After that, the peppers soak. We hydrate them for several hours, sometimes overnight. This part requires patience, but it’s worth it. The peppers soften, the flavors round out, and everything just comes together better.
Once they’re ready, the peppers go into the blender with fresh lime juice and our spices. This is where we get creative. Are we going for a heat bomb? Something on the sweeter side? You have complete control at this point. So, add your cumin, cayenne, garlic, whatever you’re in the mood for, and blend for anywhere from 2-10 minutes! Smooth, balanced, and made from actual peppers you can point to.
Is it the fastest way? Definitely not.
Is it the best way for us? Absolutely.
And at the end of the day, that chili paste is the backbone of our chili—and a big reason it tastes the way it does.
