2005 Rosati Cabernet Sauvignon
Our 2005 is a refined and symmetrical wine with velvety burgundy color and brilliant clarity. In bottle since 2007, the wine has developed a well-integrated, complex bouquet of berries and flowers: cassis, cherry, boysenberry, and dried rose petal. Scents of leather, toasted oak, and clove underlay the bright fruit and floral aromas. The wine has a smooth, supple entry into the mouth with pleasant, palate clearing astringency and acidity.
2006 Rosati Cabernet Sauvignon
Our 2006 has a rich, dark ruby red color and vibrant clarity. Its aromas display warm blueberry compote, cherry, and cassis as well as vanilla, violets, and hints of anise, plus earthiness, and toasted oak. In the mouth, the wine is integrated and balanced with excellent fruit concentration and length. It is a rich wine with a lively freshness that lingers in the mouth.
2007 Rosati Cabernet Sauvignon
The color is a youthful, deep, dark red with superb clarity. The wine shows blackberry and red berry notes in its aromas with toasted oak, dried herbs, and coffee in the background. The wine has full, intense fruit flavors in the mouth and a smooth, medium body with firm structure, good balance, and elegance. This would be a wine to cellar; it will continue to come into its own for many years.
