Kombu-Cured Tai Chazuke.
Three ways to enjoy.

Start with kombu-cured red snapper as sashimi.
Then place it over rice with wasabi, nori, and sesame soy sauce.
Finally, add arare rice crackers and pour warm dashi over the bowl to finish it as tai chazuke.

Extra rice is available, so you can enjoy this dish in all three stages.

Simple, delicate, and comforting — with layers of umami, aroma, and texture in every step.

Fresh sakura shrimp from Suruga Bay, Shizuoka Japan.

Known in Japan as nama sakura ebi — a rare seasonal delicacy commercially harvested only from Suruga Bay, during two short fishing seasons each year.

Delicate, naturally sweet, and full of clean ocean flavor.

What should we make with it?

Daily routine.

Lighting the binchotan, letting it burn properly, then moving it to the grill.

Before the first skewer hits the fire, the work has already started.

Heiwa USA craft beer is available at Takasei.

Brewed in Burbank by Heiwa Shuzo of Wakayama, Heiwa USA brings together Japanese brewing sensibility and California local craft.

It feels like a natural fit for Takasei — a modern expression of Japan and California, built around craftsmanship, locality, and food-friendly pairings.

Pale Ale
Clean, refreshing, and gently hop-forward.
A great match for yakitori, fried dishes, and savory plates.

White Ale
Smooth and bright, with a soft citrus character.
Pairs well with seafood, lighter appetizers, and delicate flavors.

Sansho Golden Ale
Crisp and aromatic, with the distinctive freshness of Japanese sansho pepper.
Especially well suited to grilled chicken, dashi-based dishes, and refined Japanese flavors.

Modern, balanced, and made to enjoy with food.

📣Limited Edition📣

“DASSAI BLUE NIGORI SPARKLING NAMA”

*Nigori Sparkling Nama🍶🌾
*Made in New York, USA 🗽🇺🇸

Starting January 8th, the latest release from Dassai USA, Nigori Sparkling, is a special sparkling sake made in New York, USA🇺🇸

Its most distinct feature is the delicate bubbles created through bottle fermentation, the same method used for Champagne, making this a truly artisanal process✨

This Nigori Sparkling is also a ‘nama’ sake, meaning it’s unpasteurized, preserving its fresh, lively flavor!
It’s recommended to be enjoyed within about 40 days of opening.

Based on Dassai Blue 50, made from Yamada Nishiki rice polished to 50%, it undergoes handcrafting and a 35-day fermentation process.

The sake is coarsely filtered, resulting in a rich, creamy mouthfeel with a signature cloudy appearance😋

With aromas of green apple, pear, and white blossoms, the taste is fruity and refreshing⚡️

The acidity and bubbles balance the sweetness, making it a perfect match for Takasei’s dishes, especially light appetizers and those with creamy sauces🥂

The 360ml bottle is perfect for a single evening’s enjoyment.
The champagne-style cap is easy to open, making it ideal as a pre-dinner drink or paired with food💫

Available starting January 8th💨
