Creamy Three-Cheese Linguine with Beef, Italian Sausage and Spinach
Ingredients:
1 pound linguine pasta
1 pound ground beef
1 pound Italian sausage (casings removed)
1 large onion, chopped
4 cloves garlic, minced
10 ounces frozen spinach, thawed and squeezed dry
2 tablespoons olive oil
4 tablespoons unsalted butter
¼ cup all-purpose flour
3 cups whole milk
1 cup chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
2 tablespoons Cajun seasoning
1 tablespoon Italian seasoning
1 teaspoon smoked paprika
Salt and black pepper, to taste
Directions:
1. Cook the linguine in generously salted boiling water until just tender. Drain well and set aside while you prepare the sauce.
2. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and Italian sausage, breaking them into small crumbles as they cook. Once browned, drain off any excess grease.
3. Stir the onion into the skillet and cook until softened. Add the garlic, followed by the spinach, and cook for another couple of minutes until everything is heated through.
4. In a separate saucepan, melt the butter over medium heat. Whisk in the flour until a smooth paste forms.
5. Slowly whisk in the milk and chicken broth, stirring continuously until the sauce thickens.
6. Stir in the heavy cream, Parmesan, mozzarella, Cajun seasoning, Italian seasoning, smoked paprika, salt, and black pepper. Continue stirring until the cheeses melt into a rich, creamy sauce.
7. Add the cooked linguine to the cheese sauce, then fold in the beef, sausage, and spinach mixture. Gently mix until the pasta is evenly coated and everything is well combined.
8. Serve while hot with extra Parmesan or chopped parsley if desired.
