This is a great recipe for pistachio lovers! No artificial flavoring, I omit the green food coloring completely.

"My grandfather worked as a fisherman in southern Italy and he said stopping by Capri for this treat was something everyone on board anticipated. While there was of course great savory food, everyone went to the bakeries to get this. After a lot of prying he got one of the places to cough up a recipe. Neither he nor my grandmother were bakers and the recipe wasn’t used until I recently extracted it from the depths of his journal after his passing. I wonder if this tastes like he remembered it all of those decades ago. "

If you love orange flavored pastry, bread or cookies, you will love this. I did add 1/2 top orange extract, because I love orange anything...lol...for a change you can add semi sweet chocolate chips, super yummy!

My daughter is an aspiring baker, but is still uneasy to do from scratch. This is by far the easiest not from scratch, scratch tasting version of carrot cake.

Carrot cake is one of my favorites especially around Easter time, but it's a great cake with coconut, raisins, pecans and cream cheese frosting.This Carrot Cake starts out with a cake mix and adding pineapple, cream cheese frosting, to make a semi homemade cake that taste like scratch cake
