One year ago today, we opened our doors to the public, and what a year it's been.
I learned how to run a brewery, a kitchen, a bar, and a business, a feat made only easier by a rock star team.
Since day one, our mantra has remained the same, the golden rule: Treat everyone the way you'd want to be treated. We brew the quality of beer we want to drink, we make quality food that we'd want to spend our hard-earned money on, and we treat our guests as family & friends with best-in-class service.
To celebrate, we've got 4 barrel-aged beers on draft today, 2 new, and 2 returning favorites:
๐ Barrel-aged Back to the Start: Brewed with my friend Chad Lindahl to commemorate his time at Oswego Brewing - the brewery where we brewed our very first commercial beer. 30-month cognac cask-aged imperial brown ale, finished on Amburana & Sugar Maple wood.
๐ Barrel-aged Kittywampus: Straight From the Barrel - For the first time, Kittywampus presented without adjuncts. 15-month eagle rare barrel-aged imperial porter.
๐ Reflection (2025): Our annual blend of our absolute favorite barrels. A blend of imperial stouts aged for 19 & 32-months in Blantons, Russell's Reserve, and Four Roses barrels.
๐ Continuum (2026): pictured here, Continuum is our 1st anniversary beer. Aged 24 months in a single Four Roses barrel, this vintage is a nod to our first commercial release: Triple Chocolate Cupcake. Despite being brewed *without* chocolate this time, this is one of our most chocolate-forward beers we've ever put out. Bourbon-soaked fudge is the flavor profile here, with a four roses cherry-on-top presence popping in through the finish. It's truly decadent.
Thank you to my team, our customers, and to the City of Aurora, for a great first year. We thank you all for giving us the opportunity to serve you, and for allowing me to take a hobby that began in a Downtown Aurora apartment, and turn it into something bigger than I could've ever imagined. ๐
