I was scrolling through old pictures trying to find this brunch board from 2019… and instead found a camera roll FULL of cute babies, a toy-filled house, and approximately a million new recipes. 😂

It’s hard to believe I started this business at 36 years old, with two little kids, a separate full-time job, zero dollars to invest in it and absolutely no idea what I was doing.

So on this Labor Day, if you’re feeling frustrated, restless, or a little stuck in your career, let this be your reminder: it is never too late to try something new. You don’t need to have it all figured out. You don’t need a huge budget. And you certainly don’t need to know exactly where it’s going to lead. You just have to start.

I’m busy too.

I run a business, teach school and create content. I’m a wife, and I’m a mom to two boys who each play two sports (including travel baseball ⚾️).

Life is FULL and it is not slowing down anytime soon.

But one thing I really value is sitting down around the table and having a home-cooked meal together as often as we can.

We aren’t talking perfect or complicated meals. Just real food, at home, together.

That’s why I created The Dinner Darling - to make that part easier for other busy families.

Girl...

For the days when you’re running from one thing to the next, dinner doesn’t need to be a production.

If you’re making dinner in your pajamas, with your hair in a claw clip, and not trying to prove to the internet that you have it all together... welcome. 🙋🏻‍♀️

Tonight’s dinner is frozen meatballs, a jar of Rao’s, and a slow cooker. That’s it.

What’s for Dinner Wednesday - Meatball Subs!

Ingredients:
• 1.5 lbs ground beef
• 2 eggs
• 1/4 cup Italian breadcrumbs
• Salt and pepper, to taste
• 1/2 tsp garlic powder
• 1 (24 oz) jar marinara sauce
• 6 hoagie rolls
• 6 slices mozzarella cheese

Directions:
1. Preheat oven to 425 degrees F., and spray a large baking sheet with nonstick spray.
2. In a large bowl, combine ground beef, eggs, breadcrumbs, salt, pepper and garlic powder.
3. Form into 1.5 inch meatballs (I get about 16), and place on your baking sheet. Bake for 15 minutes.
4. Meanwhile, heat sauce in a large skillet. Remove meatballs from the oven and place in the sauce. Simmer for 5-7 minutes, or until meatballs are cooked
through.
5. Turn oven to broil, and place cheese on the hoagies. Toast for about 3 minutes or until cheese is melted.
6. To plate: Place toasted bread on a plate and top with meatballs and sauce. Enjoy!
