Ichiro Akuto 先生認為「人」在製酒過程是極為重要的存在，所以秩父的製作過程包括酒心的分段，都是由 Akuto 先生及其團隊親力親為，嚴格地監控把關。在 Akuto 先生的帶領下，秩父蒸餾廠已成為首屈一指的精緻日本威士忌品牌之一。

秩父的蒸餾廠廠房目前總共有 2 座，一座建於 2008 年（簡稱 #1 廠），另一座建於 2019 年（簡稱 #2 廠）。

秩父 #1 廠擁有八座日本北海道水楢木製成的發酵槽 ​(Washback)、及兩座蘇格蘭 Forsyths 製作的銅製壺型蒸餾器，在 2019 年之前的年產量為 60,000 公升的純酒精 (LPA)，而在 2019 年 #2 廠落成後， #1 廠的產量將會下降成每年 50,000 公升 LPA。

秩父 #2 廠有五座法國橡木製成的發酵槽 ​(Washback)、及兩座與 #1 廠同樣形狀壺型蒸餾器。於 2019 年 10 月份蒸餾出第一批新酒，年產量達 240,000 公升 LPA，但目前尚未推出由 #2 廠蒸餾熟成的威士忌。
