It was a halcyon period at Indochina. Saigon was the capital of the French colony in Cochinchina. The "Beautiful Era" flourished and Gallic ingredients were added to Vietnamese cuisine but still maintained its authentic flavor and taste. Along with the growth of Saigon as a city, there spawned a stunning young lady, Hoa Ly, who later married the son of the French Governor of Laos. Being a direct d

escendant of one of the co-founders of Cao Dai Dynasty and the daughter-in-law of the governor, Hoa Ly was fortunate to see and experience the lavish social life of the era. Developed a passion for cooking, she was keen to observe how dishes were prepared before served. This passion makes up what was known today as Le Dalat Restaurant. The beauty and prosperity of that era was reflected today in the restaurant situated at the very heart of Bangkok City. The atmosphere and intricacy of its interior design and architecture brings forth the artistry and creativity developed in that period. The fading photographs and paintings on the wall are living testaments of how one woman with passion can do so much in her time and positively affect the future. Le Dalat is a tribute to Madame Hoa Ly.
