Our sake evening’s selection is carefully chosen to suit the incredible special menu at the one-Michelin-starred Sushi Masato. Every bottle is a highlight on its own.
Ubusuna Homase and Ubusuna yeast-free: These Namazake offer wonderful modern style flavor profiles that is almost in its own league, gorgeous aroma reminiscent of banana and pineapple, with slight effervescence, and the nuances of the diversity of local microorganisms, combine to create a unique complex profile that begs drinkers to wonder how wonderful the world is. ⭐️⭐️⭐️
Nichi Nichi Akitsu Yamada Nishiki and Tamasake: The Kimoto sake from Kyoto is a work of art. The brewery is only 3 years old but already well-recognized among foodies and on the shelves of leading establishments across Japan. Fresh, light, clean, crisp, dry with acidity on the palette, and with pronounced umami. Super easy to drink and enjoy with food. Tamasake offers a unique profile that quietly develop over the hours. Akitsu Yamada Nishiki is one of our most favorites for its superior-roundedness, and balanced profile. ⭐️⭐️⭐️
Aramasa Hinotori: this one needs not be said much. The highest ranking sake in Saketime that just overtook Juyondai. It is always a happy meal to have a bottle this to pair with. Ankimo is its best friend. 😇🐟
Aramasa Colors Viridian is also another that does not need much explanation. Clean, fruity, fragrant and rich. Among all the Colors, Viridian offers the richest and longest after flavor. 🎄
Dassai Umeshu: if you are Dassai fan enough, you know of its existence. But to come across one at your table, it is another story. This super rare bottle of Dassai offers plum richness, sweetness and umami all at the same time. We drank and wonder when it would come by again. 🌟🥹
Nifudazake and Tokachi are also very good on their own. Both paired well with selected dishes and were a great add to the meal. 🍶🥰
