The life of a distiller: get up early, proof the once distilled (stripped wine), fill the still and reproof. Light the fire and keep an eye on everything because it comes out at 190+ proof. Make sure nothing blows up. Wait, what? Yep, after going through the copper tower bubble plates we essentially end up with a highly flammable and very pure ethanol. Next it gets proofed down to 80 (40% alcohol) and we let it mellow for at least one month before bottling. This, my friends is how we make our silky, floral, opulent vodka. Want some? Did you know there are over 600 varieties of mint? That's mind blowing, right? Todd and I worked late tonight on a new project that we're very excited about! This is fresh, hand harvested mint from Todd's garden! We are making a very lightly sweetened schnapps and my mind is reeling with ideas for summery minty beverages 🤩🤩🤩

Limoncello, an Italian after-dinner digestif is just one of the fun products we are making. I just adore the fresh lemon aromas! Yum, just a little bit of sweet to offset the lemon and alcohol. There's a lot of hand-peeling of lemons involved so we make this in micro batches!

One of our most intriguing spirits is an Ouzo inspired distillate. We are hand foraging wild fennel and infusing a high proof spirit with it. The aromas and flavors will knock your socks off! It has a very intense licorice scent and flavor. A classic digestif! Our friend, Lance (Dances with Plants) showed us how to forage this lovely botanical and while we're perfecting our recipe and process I've been exploring some delicious cocktails that we can make with this ..... If you haven't tried this one yet, be sure to ask for it. I'm calling it Fennel 150 for now. It's a life changing beverage. I'm not joking! (so so so goooood)
