The Sommelier's Choice — Pecorino IGT, Tenuta Ulisse (€12.50)

A grape, not a cheese. Pecorino the wine has been documented since 1526. A local statute fined anyone who damaged its vines — yet by the 1980s it had nearly vanished. Revived by a handful of devoted growers, it is now central Italy's most exciting white: citrus, white peach, a fresh, faintly balsamic finish. Ours is unearthed from Tenuta Ulisse, one of Abruzzo's most awarded cellars.

K White is Pinot Blanc, Chardonnay and Sauvignon from the alpine slopes above Lake Caldaro, folded into one juicy, elderflower-scented white. It comes from Kellerei Kaltern - the cooperative of some 600 grower families whose Quintessenz has earned Gambero Rosso's Tre Bicchieri five times. Pedigree, at a Friday price.

The Maltese Table — Grillo DOC, Baglio di Pianetto (€11.50)

The scent of orange blossom and Mediterranean scrub. From an island a hundred kilometres north of ours. Count Paolo Marzotto founded Baglio di Pianetto in 1997 to farm two Sicilian terroirs with the savoir-faire of the great French châteaux organically. His Grillo was made for our table: ħobż biż-żejt, fresh ġbejniet, a warm evening that refuses to end.
