Wing Lei Bar has always had a fling with the Negroni 🥃💚

What began as a secret pour at our outbound guest shifts (and a cheeky inbound moment for Asia’s 50 Best Bars) quickly became a cult favorite. Before long, it was our signature room-drop staple, bottled with love for every guest bartender. Fast forward to today, and one
world record for the largest Negroni later!

Banana all the way: infused, diluted, and even in the bitters 🍌🥃

A true love letter to Mark’s (Mark Lloyd) self-proclaimed obsession with all things banana, this cocktail chases the fruit down to its most concentrated, indulgent form possible. Bringing his background in chemistry into the mix, Mark converts natural starches into sugar, uses extracted banana water for dilution, and finishes with custom bitters crafted by macerating actual banana bread into black walnut bitters.

The result? The most bananay Banana Old Fashioned you will ever taste. Served over rocks with a cheeky banana-flavored Lego man.

An insider favorite, officially taking its place on the menu 💚🍸

A secret staple since Mark (Mark Lloyd) took the helm at Wing Lei Bar, this Negroni twist has been handed out behind the scenes for room drops and guest shifts. Now, it earns a permanent spot on our menu—refined after Mark’s multiple collaborative shifts alongside Andrew Ho (Andrew Ho) of Guangzhou’s Hope & Sesame (Hope & Sesame 庙前冰室 Guangzhou).

Inspired by Hope & Sesame’s contemporary approach to honoring traditional Chinese flavors, this cocktail reimagines the familiar Smacked Cucumber (拍黄瓜) through a modern Cantonese lens. We fat-wash gin with sesame oil, stir it with Campari and vermouth, and garnish the drink with two cucumber rolls steeped in the exact same sesame and chili marinade.

Come try this Cantonese-inspired riff on a classic, now officially available on the menu at Wing Lei Bar 🥒✨

Built from another year of international collaborations, UNITY II has officially arrived at Wynn Palace’s Wing Lei Bar. 🥃 This latest edition acts as a liquid scrapbook, tracing moments, friendships, and flavor exchanges across Tijuana, Bangkok, Hiriketiya, London, and Vancouver.

Under the direction of Mark Macau, this latest evolution brings six new cocktails and two entirely new categories to the menu: Shaken and Fizzes. Expect high-science chemistry put strictly in service of flavor, from strawberry-yoghurt washed Baijiu to Sri Lankan spices, precision-carbonated highballs, and an unabashed, multi-textured celebration of banana. It’s the spirit of the international bar community, distilled here in Macao. 💚
