Etna DOC vineyards are dry-farmed.
•
Honestly, there’s no need for regular irrigation, drip lines, or the like. The mountain receives between 25–75 inches of rain throughout the year and the top of the volcano receives snow between November and April.
•
With rain, this snowmelt is added to the volcanic sandswhere the vines can access it throughout the growing season.

Some of THE MOST EXCITING things happening on Mount Etna right now are these vivacious volcanic sparkling wines.
•
Etna Spumante DOC is made in either bianco or rosato, using the dark grape Nerello Mascalese (min 80%) and the traditional method (two fermentations; the second if which takes place in bottle). These sparkling wines must be aged for a minimum of 18 months to carry the Etna name on the label. Often, the wines are aged for much longer before being disgorged.
•
Etna Spumante is most often made in a Brut style—crunchy, crisp, fresh-fruit, and racy acidity—but we also see these bottle-aged sparkling wines without any dosage (dosaggio zero). They can also be labelled Extra Brut, (which could infer additional bottle-aging).
•
