You know, in France, we take our chicken very seriously. My grandmother used to say, “Un bon poulet, c’est comme une promesse bien tenue”, *a good chicken is like a promise well kept.
When we created this dish at GOTHAM, I wanted to bring that feeling back.
We cook it sous vide, low and slow, just like the Sunday lunches I grew up with, but we finish it with that perfect crisp skin, a little caramelization, and a natural jus, because… well, we’re not here to be average.
It’s clean. It’s honest. And yes, it’s got flavor that hugs you back.
